BLACK CAVIAR

Fish caviar is a luxurious refined delicacy, which was a delight only for the palate of royal people in the past. Russians and Persians were among the first people in the world who popularized this delicacy and called it a “cake of strength”.The most coveted is the black caviar, also called “black gold”. The most valuable and highly praised black caviar is derived from sturgeon species – great sturgeon, European sea sturgeon, starry sturgeon and sterlet. The fish product is abundant in amino acids, asparagine, glutamine, serine, lysine and leucine. It contains magnesium, phosphorus, potassium, calcium, iron, iodine and sodium as well as vitamins A, B, C, D, F and E. Caviar is amongst the most nutritious foods as it contains about 250 calories per 100 grams.

STURGEON SPECIES

The sturgeon fish is grown in the crystal- clear snowmelt water of Ogosta Reservoir. Due to the lack of industrial pollution and the advantages of growing fish in cages, our customers receive a product, which closely resembles the qualities of natural caviar.

The main purpose of our sturgeon farming is the breeding of new generations of sturgeon fish for sale of black caviar. We are growing the following species:

  • Russian sturgeon (Acipenser gueldenstaedtii)
  • Siberian sturgeon (Acipenser baerii)
  • Sterlet (Acipenser ruthenus)
    • The total biomass is 200 t – Russian sturgeon (Acipenser gueldenstaedtii) (90 000 kg), Siberian sturgeon (Acipenser baerii) (100 000 kg), Sterlet (Acipenser ruthenus) (10 000 kg).

The female sturgeons at this moment are:

  • Generation 2013: Russian sturgeon (Acipenser gueldenstaedtii) – 1000 pcs. and Siberian sturgeon (Acipenser baerii) – 8000 pcs.
  • Generation 2014: Russian sturgeon (Acipenser gueldenstaedtii) – 7000 pcs. and Siberian sturgeon (Acipenser baerii) – 1000 pcs.
  • Generation 2015: Sterlet (Acipenser ruthenus) – 7000 pcs.

BLACK CAVIAR PRODUCTION

Fish Invest Ltd. plans to process around 600 kg of black caviar from Sterlet (Acipenser ruthenus) and around 2500 kg from Siberian sturgeon (Acipenser baerii) in the first quarter of 2021. In the following years the main production of black caviar will be from Siberian sturgeon (Acipenser baerii) and Russian sturgeon (Acipenser gueldenstaedtii). The planned annual production of black caviar from different species of sturgeon should reach 5-6 tons on annual basis in about 3 years. We are proceeding with new generations of sturgeons and every single year we put in the farm around 15-20 000 new fishes in order as a final to have 8000 pcs of female sturgeons.
We have a brand new processing plant, which has a special line for production of black caviar with all needed equipment for it. Also we have all necessary facilities for processing of the meat of sturgeon (gutting, filleting, smoking and MAP packing).
Our goal is to reach the highest quality of our product and to that end we conduct the packaging by hand in a controlled environment. Our caviar follows the traditional Russian recipe – Molossol (little salt), but can also be prepared according to instructions from the client regarding both recipe and packaging. We have a very good and experienced caviar technologist, but we are also open to partner with a customer-appointed specialist in order to achieve a customized product according to the client’s needs.
Our caviar is 100% natural and resistant, with no additives, apart from salt. It is absolutely free of antibiotics, hormones, artificial coloring, chemicals or preservatives.
When you buy Fish Invest Ltd. caviar with original labeling, you receive a product with a CITES license. Our label is in compliance with the instructions of the Convention on International trade in Endangered Species of Wild Fauna and Flora. Country of origin, year of production, producer and batch are all displayed according to worldwide standards.
The farm has all required documents, issued from Ministry of Agriculture and Food Safety, the Ministry of Environment and Water and also CITES license.
